How to cook a delicious Ofe Akwu Stew

Ofe Akwu stew is made from palm nut fruit. This delicacy is from the Eastern part of Nigeria. The igbos.
 Recipes needed to prepare Ofe Akwu.
  • Palm nut fruit 
  • Stock fish
  • Assorted meat 
  • Goat meat ( I usually prefer goat meat than cow meat)
  • Dried fish
  • Scent leave
  • Okpei or ogiri
  • Crayfish 
  • pepper 
  • onions 
  • Ehu seed (local nutmeg)
  • Cubes and salt to taste.
Directions:
firstly :Boil the palm nut fruit to get soft,  then extract the juice from it by pounding it on a mortar. Keep the juice aside because that's what you will need.

Secondly: Stem the meat,  add the stock fish(this is so the stock fish can get soft) and dried fish.

Thirdly : Pour the extracted juice  from the palm nut to the pot used to the stem meat then cook for about 15minute. Now you can add your grinded crayfish,  pepper,  onions, cubes, okpei or ogiri, ehu(grinded), I like the ehu because of its unique aroma and taste in Ofe Akwu, add salt to taste, we are also there.

Finally allow it to cook for another 10minute in order to get thick. Now u can add your scent leave, cook for one minute and bring it down.
Yummy yummy Ofe Akwu is ready to serve and enjoy.
This stew can be served with boiled white rice,  yam,  and agidi.
